Spelling variations are not a good reason for deleting a page at the best of times. If it is a category, it's just silly, because all that you do is make it a "Wanted category". If you really don't like the British and Australian and New Zealand spelling "organisation" you should do a category redirect, but you or a bot will have to edit each page that wants to be in that category so that it is in the new category and make sure that the new category has a parent category. Simpler to restore the category, but you're a bureaucrat so you and the other active contributors should discuss it.
